Good morning, what a great year for Palisade peaches, 95% of the crop was whiped out by a late freeze. The ones I did get ahold of tasted very delicious. Time to can.

Had a good evening canning, 24 jars of peaches and Cantaloupe. The Rocky ford melon and peach mixture makes for a great flapjack or icecream topping not to mention slathering toast with it.

Here in two weeks I will switch to pickling the vegetables and late fall will switch to dehydration for herbs, meat, late fruit.

Game jerky for the holidays, if we can harvest with our tag. Anyone else into canning, fermentation, or dehydrated for the winter months? A garden?

Also, some of the best soup mix can be achieved with little effort using a dehydrator.

Our growing season at 7000 feet elevation is very short but worth it.
